CRAWFISH CAKES

1 lb.     Diced Crawfish Tail             1 lb.   Breadcrumbs

3 ct.     Eggs                                              1 tsp.  Salt

1 tsp.   Worcestershire Sauce                 1 tsp.  Black Pepper           ¼ cup  gran. Garlic                             1tsp.   Dried Basil

1 tsp.   Tony’s Seasoning                         1tsp.     Lemon Juice

1 tsp.             Seafood Seasoning                      1 tsp.   Creole Mustard

¼ cup Diced Red Bell Pepper                   ¼ cup  Diced Celery              

¼ cup Diced Green Peppers           ¼ cup   Red Onion                

Combine eggs, veggies & seasonings, add crawfish & enough breadcrumbs to absorb moisture.  Blend well, roll into balls & then mold into patties.  Pan sear in olive oil until done 8-10 minutes.  Drain on paper towels

Cool Lime Sauce

½ cup         Mayonnaise        1 tsp.                   Minced Garlic

½ cup         Sour Cream         1 tbls.         Horseradish

1 tbls.         Lime Juice           1/2tsp.       Tabasco

2 tsp.                   Lime Zest             1 tbls.         Chopped Green Onions

1 Tbsp.      Cilantro                1 tsp.          salt

 

Serve w/ Crawfish Cakes
