Sweet Potato Black Bean Burgers

Sweet Potato Black Bean Burgers with Balsamic Onions and Miso Cashew Paste

1 cup cooked steel cut oats

2 cups cooked black beans

2 cups shredded sweet potato

1 Tablespoon chia seeds mixed with 3 Tablespoons water

1 teaspoon cumin

1 teaspoon oregano

¼ teaspoon salt

½ teaspoon black pepper

1/3 cup whole wheat flour

3 Tablespoons + 2 Tablespoons Olive oil

1 medium onion, sliced

1 tablespoon balsamic vinegar

1 cup raw cashews

Approx. 1 cup water

1 teaspoon miso paste

Sandwich bread or buns

To make burgers:

In medium bowl, combine oats, black beans, sweet potato, chia seeds with water, cumin, oregano, salt, pepper, and flour. Form into patties. Heat 3 Tablespoons oil over medium heat. Sautee on each side about 2-3 minutes or until sweet potatoes are beginning to turn golden. Set aside.

To make onions: Heat 3 Tablespoons oil over medium-low heat. Cook onions until soft and translucent. Add balsamic vinegar and continue to sauté another 2-3 minutes. 

To make miso-cashew paste: Place cashews in blender and just barely cover with water. Add miso paste. Blend until a smooth paste forms (Note: cashews can be soaked in water over night to make them even softer and the paste soother). Cashew paste can be made thinner by adding more water, or thicker by adding more cashews.

Serve burgers on buns or grilled bread with onions and miso cashew paste. Makes 6 burgers.
