Shrimp & Grits

  • 1 cup of prepared grits
  • 2 slices of bacon
  • 2 tablespoons butter, divided
  • 1 garlic clove, minced
  • 1/4 cup chopped yellow onion
  • 6 large shrimp, peeled
  • 1 oz (or more) beer
  • 1 oz chicken broth
  • 1 egg

Fry bacon in a 10" skillet until cooked through. Remove bacon in drain. Add 1 tablespoon of butter, onions, garlic and shrimp to the bacon greased skillet. Cook until shrimp is red and onions are soft. Add beer and broth and cook until shrimp is cooked through and broth is hot.

Meanwhile, melt remaining butter in a non-stick pan and fry egg.

Serve by placing shrimp mixture over grits and topping with the fried egg.
