Smoked Jalapeño Poppers

20 whole Jalapeno’s

1 Cup Cream Cheese

2 TBS Dry Rub

¼ Cup BBQ Sauce

½ Cup Pepper Jack Cheese

½ Cup Cheddar Cheese

.35# Sausage

10 Slices of Apple Wood Bacon

a)      Core Whole Jalapeno’s – Remove seeds if you don’t like the heat

b)      Mix Cream Cheese, Cheddar/Pepper Jack Cheese, Dry Rub BBQ sauce and chopped sausage

c)      Stuff cheese and meat mixture in whole Jalapeño’s

d)      Wrap outside shell of jalapeno with Apple wood bacon

e)      Smoke for 45-60 min on smoker or until bacon is browned

Garnish tops of Jalapeno’s with chopped green onions
