·         2 tbls flour,

·         2 tbls butter,

·         2 C cream,

·          salt & pepper to taste,  

·         1/8 tsp saffron, ¼  C ea ( sharp cheddar, parmesan reggiano,)

·         2 tbls aged provolone,

·          romano, asiago shredded:

·         2 cups pasta:

Melt butter in skillet and whisk in flour and stir for 2 min until blonde roux is formed. Add salt and white pepper to taste and pinch of saffron threads, then slowly whisk in cream to form sauce. Add cheese mixture to pasta and bake in oven until cheese is golden brown
