1 cup smoked sausage, chopped
1 large onion, chopped
1 red bell pepper , chopped
1 green bell pepper, chopped
1/4 cup flour
1 quart heavy cream
1 can chopped tomato with peppers
1 tbsp blackening seasoning
20 medium shrimp, shelled and deveined
8 toast points
Chopped green onion for garnish
Sauté sausage over medium heat until cooked through and fat has started to render.
Add onions and peppers and sauté until cooked through.
Add flour and stir for three minutes .
Add blackening seasoning and slowly stir in cream. Add tomatoes and reduce to a sinner. Slowly simmer for20 minutes , stirring often .
Over medium heat , sauté shrimp until cooked through .
Arrange toast points on plates , divide sauce evenly among plates . Top with shrimp and garnish with green onions.
