Blackened Seafood Pasta

BLACKENED SEAFOOD PASTA

INGREDIENTS:

½ pound of peeled Gulf Shrimp

½ pound of scallops

¼ cup of diced red bell pepper

¼ cup of diced green bell pepper

¼ cup of diced red onion

¼ cup of chopped fresh parsley for garnish

1 teaspoon of ground pepper

¼ cup of minced garlic

1 teaspoon of salt

½ cup of grated parmesan cheese

½ cup of shredded Swiss cheese

1 pound of fettuccine pasta

2 tablespoons of butter

¼ cup of blackened seasoning

2 cups of heavy whipping cream

DIRECTIONS:

1.    Cook pasta in large pot of boiling water till dente.

2.    While pasta is cooking, melt butter in large sauté pan and lightly sauté bell pepper and onion. Then add whipping cream and constantly stir until bubbly. Reduce heat and add salt, pepper and minced garlic. Simmer until thickened. Set aside.

3.    Season shrimp and scallops with blackened seasoning and sear in sauté pan. Stir in sauce and add cheese.

4.    Drain your pasta and serve sauce over noodles. Garnish with parsley.
