Shrimp BLT Quesadilla Recipe


¼ pound of fresh, peeled shrimp

1 ½ tbsp of lime juice

Pinch of Chili powder

1 tbsp of chopped cilantro

2 tbsps of crumbled bacon

¼ cup of diced tomatoes

½ grated Monterey Jack cheese

½ grated cheddar cheese

½ cup of shredded lettuce

2 flour tortillas

Peppered mayonnaise to taste

Sour cream and salsa served on the side

- Poach the raw shrimp in boiling water for 1-2 minutes then rinse under cold water to prevent from over cooking.

- Chop shrimp to desired thickness

- Mix cilantro, Chili powder, lime juice and shrimp in a bowl and marinate for 10-15 minutes

- Heat non-stick skillet to medium high. Add a touch of oil or butter to the pan and place one tortilla at a time on the skillet for 10 seconds on each side, flipping a few times to desired crispness

- Remove that tortilla and repeat with second. Once heated, reduce heat to medium and leave tortilla in skillet

- Sprinkle tortilla with shredded cheeses and pour shrimp mixture over cheese. Add diced tomatoes and sprinkle crumbled bacon over shrimp

- Spread peppered mayo on second tortilla and place on top. Flip quesadilla with a spatula. Heat until cheese begins to melt

- Remove from skillet and serve with side of sour cream, salsa shredded lettuce
