California Grilled Chicken Flatbread

California Grilled Chicken Flatbread Recipe by Chili's

 

Ingredients Amount Flatbread, pre-baked

1 each

Pre-baked flatbreads are available in most grocery stores

Tomato Pizza Sauce Puree

¼ cup

Puree your favorite pizza sauce (if it is chunky)

Pizza Cheese Blend

1 ½ cup

Italian Shredded Cheese Blend

Grilled Chicken

1 medium breast

Cooked, cooled and diced

Applewood Smoked Bacon

1/8 cup

Roughly chop cooked bacon

Garlic-Aioli

2-3 tbsp

(see recipe below)

Grated Parmesan

½ tbsp

Pico de Gallo

1/8 cup

Can also substitute with diced tomatoes

Avocado Slices

¼ avocado

Chopped Cilantro

1 tsp

       

Garlic-Aioli sauce:

In a food processor, blend:

  • ½ cup mayo
  • 1 tbsp chopped fresh garlic
  • 1 tbsp lemon juice

 

Directions:  

  1. Preheat oven to 425°.
  1. Spray cookie sheet pan with vegetable spray evenly coast to coast. Place flatbread on pan.
  2. Spread pizza sauce evenly coast to coast across the flatbread. Top with shredded cheese, Applewood smoked bacon and grilled chicken. 
  3. Bake until cheese is melted and begins to brown slightly, 8-10 minutes.
  4. Once flatbread is cooked, remove from cooking pan, place onto cutting board and drizzle garlic aioli across the top of the flatbread.
  5. Evenly distribute the pico de gallo over the top of the flatbread and sprinkle with seasoned parmesan blend.
  6. Cut the flatbread in half, cut the halves in half leaving 4 equal sections. Cut each section in half on a bias creating 8 triangle shaped pieces. Place 1 piece of avocado on top of each slice of flatbread. Garnish with chopped cilantro.
