1/3 cup olive oil
1 cup mushrooms, sliced
8 tomato wedges
1 lb. shrimp, peeled and deveined
Cavender's Greek seasoning
1 cup cooking sherry
cooked rice or angel hair pasta
Saute mushrooms for 2 minutes. Add shrimp and cook for one more minute. Add 1 cup of cooking sherry and simmer until sherry decreases. Thicken. Add tomatoes and green onions. Pour mixture over rice or angel hair pasta and garnish. Serves 2.
