10-12 Oz Fresh Red Fish or Snapper

 

1 tbs Owl Dust (or cajun seasoning)

2 Lemons

Butter to sautee fish

2oz shot of Herb Saint Liquor

1 sprig of fresh Thyme

 

Compound butter

 

1 Lemon Zest

1/2 bunch flat leaf parsley

1 Sprigfresh Thyme

1 cup Capers

1/2 Unsalted Butter

      Herb Saint shot

 

 

Dust fish with seasoning, pan sear fish in a hot pan with butter. When fish is done on one side flip fish squeeze lemon and Herb saint to pan. Put in hot oven 450 degree for 5 mins (depends on how thick fish is). Top fish with cold compound butter.
