two glazing sauces for grilling kabobs:

 

Spiced Kielbasa and Fruit Kabobs

 

Ingredients:

1 pkg (16 ounces) light kielbasa, cut into 1-inch chunks

3 apricots, pitted and cut into quarters

2 ripe plums or peaches, pitted and cut into 1-inch chunks

1 pineapple, cut into chunks

6 tablespoon sweet orange marmalade

1.5 tablespoon all-spice powder

1 pkg bamboo kabob skewers

 

Directions:

 

1. Soak bamboo skewers in water for 30 mins to prevent them from burning on the grill.

2. Thread kielbasa, apricots, pineapples, and plums / peaches onto skewers.

3. Mix marmalade and all-spice powder in a cup.

4. Place skewers on medium grill for about 5 minutes or until kielbasa browns and fruit chars slightly, turning skewers occasionally.

5. Brush marmalade mixture onto kabobs evenly and thoroughly once per side toward end up grilling.

6. Serve with any remaining marmalade sauce.

 

 

Sweet and Sour Kielbasa Kabobs

 

Ingredients:

1/3 cup brown sugar

1 tablespoon cornstarch

2/3 cup apple juice

1/4 cup cider vinegar

1 teaspoon orange zest

1 lb kielbasa, cut in chunks

1 green bell (or red) pepper, cut into chunks

1 onion, cut into chunks

1 pineapple, cut into chunks

1 pkg bamboo kabob skewers

 

Directions:

 

1. Soak bamboo skewers in water for 30 mins to prevent them from burning on the grill.

2. In small saucepan, combine brown sugar, cornstarch, apple juice, cider vinegar and orange peel; blend well.

3. Cook over medium heat until it boils and thickens, stirring constantly.

4. Thread skewers with kielbasa, bell peppers, onions, and pineapples.

5. When ready to barbeque, place kabobs on preheated grill.

6. Cook for about 4 minutes.

7. Brush with glaze, turn and glaze again.

8. Cook 3-5 minutes or until hot and browned.

9. Serve with any remaining glaze.
