BBQ Shrimp

New Orleans style barbecued shrimp


2 cups Worcestershire sauce

2 tbsp fresh chopped rosemary

1 shallot chopped

2 lemons peeled with no pith

1 tsp ground black pepper

1 tsp blackening seasoning


Combine all ingredients and reduce by half. Strain.

Return to stove and reduce until thick enough to coat the back of a spoon.



12 shrimp peeled and deveined

1 tsp chopped garlic

1 tsp blackening seasoning

1 tbsp dry white wine

1 tbsp barbecue base

2 tbsp heavy cream

2 tbsp cold butter cubed


Add garlic and 1 tbsp olive oil to sauté pan and sauté over medium heat for one minute. Add shrimp and blackening  seasoning and cook until shrimp start to turn pink. Add wine and reduce until almost dry. Add barbecue base and cream and reduce until think . Slowly swirl in cold butter until incorporated. Serve over toast points and garnish with sliced green onions.
