9" Pie Shell
4 0z Seafood – Lobster, Crab, or Shrimp or combination of all
6 Whole Large Eggs
1 Cup Heavy Cream
¼ Cup Finely Diced Onion
¼ Cup Finely Diced Celery
6 oz Shredded Cheddar Cheese
4 Tbls Butter
Preheat oven to 350. Cook pie shell for 10 minutes. Remove from oven & let cool.
In a medium sauté pan, cook onion & celery in 2 Tbls butter till tender. In a large sauté pan, cook seafood in 2 Tbls butter till tender.
In a mixing bowl whip eggs & heavy cream.
In cooled pie shell, mix seafood, onions & celery. Add egg & cream mixture and top with cheese. Bake at 325 for 30 – 40 minutes or till golden brown. Cut & serve.
