Mahi Fish Tacos and Gold Rush Sauce

 

6 oz fresh mahi-mahi

1 oz Cajun dry seasoning

2 flour tortillas

Optional toppings:  lettuce, sour cream, Monterey Jack cheese, cheddar cheese, diced tomatoes, salsa and guacamole

Salt and pepper to taste

 

1.       Preheat grill to medium-high heat

2.       Coat mahi-mahi in Cajun seasoning

 Cut mahi-mahi into small squares

Cook on all sides until reaching an internal temperature of 145 degrees. 

6.       Heat tortillas on the grill or in the oven

7.       Serve tacos with mahi-mahi drizzled in gold rush sauce and topped with your choice of lettuce, sour cream, shredded Monterey Jack and cheddar cheese, diced tomatoes, salsa and guacamole

 

Gold Rush Sauce

 

½ cup Honey Mustard

¼ cup of your favorite hot sauce—we recommend Cayenne pepper

3 tbsp butter

Salt and pepper to taste

Mix ingredients and simmer over medium heat to desired consistency
