Blackened pork loin with fresh salsa.
The recipe is as follows:
4 medium firm tomatoes
2 fresh seeded and fine chopped jalepeneos
1/2 cup chopped green onions
1 yellow bellpepper, chopped
1/4 cup chopped cilantro
2-1/2 Tbsp. fresh lime juice
approximately 3/4 Tbsp. salt
1/4 tsp. black pepper
Seed and chop tomatoes, peppers, combine, remaining ingredients, cover and refrigerate.
Prepare your pork loin rubbed with your favorite blackened spice. Cook for approximately 2 hours until done. Slice the pork loin and top with salsa prior to serving.
