CRAWFISH (SHRIMP) BREAD

The ITALIAN FISHERMAN RESTAURANT

INGREDIENTS :  MAKES 4-5 SERVINGS

2 Cups crawfish tail meat (1 lb.) or 70/90 count P/D shrimp

I Loaf French bread

½ stick butter, 2 oz.

½ cup diced onions              ½ cup diced celery   ¼ cup diced red pepper

1 Tbsp. minced garlic            ½ tsp. dry mustard

½ cup mayonnaise

1/3 cup mozzarella cheese   1/3 cup Cheddar cheese

RECIPE DIRECTIONS:

Slice French bread in half lengthwise & scoop out inside of loaf, set aside

In a large skillet, melt butter over med-high heat. Sauté crawfish/shrimp, onions, celery bell pepper & garlic till vegetables are soft, stirring frequently to not burn garlic. Blend in dry mustard & mayonnaise. Add cheeses and blend until melted.

Spread seafood mixture inside one side of bread then put halves together. Butter the top of the loaf, wrap it in foil & bake in a 350 oven for 20-25 min.

Cut bread into desired lengths & enjoy with a Merlot or Malbec wine. Bon Appétit
