Zea Thai Ribs
1 slab of St. Louis Style spare ribs
1/4 cup dry meat rub (Meat Magic)
Zea Thai Rib Sauce (for glazing)
2 tblsp. toasted sesame seeds
2 tblsp. fresh basil, cilantro, and green onions
Preheat oven to 300 degrees. On a sheet pan, coat the rack of ribs with meat rub. Wrap ribs with foil. Bake for 2 to 2.5 hours or until tender.
On a wood fired grill:
Place slab of ribs on grill, meat side up
Brush meat side with Zea Thai Rib Sauce. When bones start to sizzle, flip the rack over meat side down. Break the membrane on the bottom of slab. Ribs should stay over wood fire for about 1.5 minutes. Flip the rack back over and apply rib sauce again. Coat slab with 2 tblsp of toasted sesame seeds. Finish with fresh herbs.
