Preparation:
1. Thoroughly wash yams before preparation.
Ingredients: 3 ½ # Yams 2.Add yams to boiling water and cook till
They can easily be pierced with a fork.
3. Remove from heat and drain.
1 gal water 4. After they have cooled,peel yams.
3 oz margarine 5. Place peeled yams in mixing bowl.
6. Add margarine to yams.
1 # sugar mix 7. Using wire whisk attachment , mix yams
1 can evaporated milk at medium speed until smooth.
1 ea fresh egg 8. Add evap milk,vanilla,sugar,egg,raisins,lemon juice,
½ oz vanilla extract bowl. Nutmeg,and cinnamon.
4 oz raisins 9.Whip on medium speed until fluffy.
1 ea lemon juice, strained 10. Remove mixture from machine and place into
¼ tsp nutmeg serving pan of your choice.
¼ tsp cinnamon 11.Place in 300 degree oven for 15 minutes.
½ # mini marshmallows 12. Add marshmallows and toast to a golden brown.
