Valentine's Muffins
(a.k.a. Chocolate-Covered Cherry Muffins)
Heat oven to 400º . Grease muffin tin (or spray w/ Pam, or use cup cake paper liners. This recipe makes 12.
1 egg
½ Cup milk
¼ Cup vegetable oil
1 ½ Cup Flour
½ Cup Sugar
2 tsp Baking Powder
½ tsp salt
¼ Cup chopped Maraschino Cherries
½ Cup Hersey's ™ Cherry Cordial Crème Kisses (or use same amount regular kisses and add ¼ tsp cherry flavored extract.) Melt in microwave.
Beat egg, stir in milk and oil. Mix in all remaining ingredients just until flour is moistened. Batter will be lumpy.
Fill cups 2/3 full. Bake 20 - 25 minutes. Remove immediately from pan.
OPTIONAL SWEET TOUCH: Drizzle with pink tinted glaze (2 tsp melted butter, couple drops of vanilla and enough powdered sugar to create a pourable consistency. A couple drops of milk may be necessary, as well.
