1 pound #1 grade Tuna (Japanese export quality)(medium dice)
3 shallots (finely diced)
1 bunch Cilantro (chopped)
1 large piece fresh ginger (finely grated)
3 ea. Large European cucumbers (peeled and sliced into thick rounds)
¼ cup soy sauce
1 tblspoon sesame oil
3 tblspoon wasabi paste
In a large mixing bowl, combine Tuna, shallots, ginger, cilantro , and ginger. Mix in soy sauce, sesame oil. Spoon on top of cucumbers to serve. Garnish with wasabi.
