INGREDIENTS (makes 8 large sandwiches):
8 five inch muffaletta rounds, split horizontally
1 yellow onion, sliced and caramelized
16 slices of swiss or white cheddar cheese (we use a swiss American blend)
32 slices of cooked bacon
2 pounds marinated grilled beef tenderloin
2 fresh tomatoes, sliced
For the sauce:
2 cups mayonnaise
1 chipotle pepper
Make sauce by pureeing the mayonnaise and pepper together until the pepper is broken up and fully mixed in. Grill both sides of the muffaletta bread (brush with oil or bacon grease before grilling). Spread sauce on the inside of each half. Add one slice of cheese to each half of bread. Place tomato slices, bacon, and beef on the bottom half of each sandwich and put a “top half” on each one. Bake in 475 degree oven for 5 mintues. Serve hot!
