1/2 cup cracked wheat or fine bulgur
1 cup minced parsley
1/4 cup minced mint leaves
1/2 cup finely chopped white or green onion
1-1/2 tomato, finely diced
6 tablespoons olive oil or oil substitute (fat-free Italian dressing)
2 tablespoons lemon juice or to taste
1 tsp. citrus salt or to taste
Pepper to taste
Pinch of all-spice or cumin
Mix all ingredients together and refrigerate for 4-6 hours. Stir or toss before serving.
