INGREDIENTS:
2-8 oz. filets of salmon
2 TBSP. mayo
1 TBSP. capers
2 anchovies
1 large sweet potato, peeled and grated
1 TBSP. oil
DIRECTIONS:
1. Preheat oven to 400 degrees F.
2. Mix together the mayo, capers and anchovies.
3. Brush the mayo mix on both sides of the salmon filets.
4. In a medium non-stick skillet, heat oil and pan sear the coated salmon fillets.
5. Line a baking sheet with aluminum foil and spray with a non-stick spray.
6. Place seared salmon fillets on the baking sheet and top with the grated sweet potato.
7. Bake 10 minutes .
