Preheat oven to 350º . Spray an 8 x 8 casserole dish with Pam™.
Sweet Potato part:
3 lg. sweet potatoes or enough to yield 3 Cups of sweet potato meat. (Just bake the potatoes until they are soft. You may use canned, but this is NEVER as yummy!) Peel the baked yams and mash the meat.
¼ Cup melted butter
¼ Cup brown sugar
2 tablespoons Orange Juice
2 tablespoons cream
2 eggs
1 teaspoon rum extract
½ teaspoon cinnamon
Dash of nutmeg
Dash of salt
Topping:
1/3 Cup Pecans
1/3 Cup Coconut
1/3 Cup Brown sugar
1/3 Cup Toffee (Heath™) chips
¼ Cup Melted butter
¼ Cup Flour
Mix all ingredients for sweet potatoes and place in bottom of dish. Mix all topping ingredients and spoon evenly over the sweet potatoes. Bake @ 350 degrees for 45 minutes or until golden toasted on top.
