Shepard Scotch Eggs Recipe

1 pound breakfast pork sausage
6 hard boiled eggs, shells removed
2 scrambled eggs
1 tablespoon of yellow mustard
Breadcrumbs
Non stick spray


Preheat oven to 400 degrees. Add the mustard to the scrambled eggs and mix well. Place a piece of plastic wrap on the counter and carefully cut the sausage into 6 even pieces. One at a time, flatten each piece on the plastic wrap. Wetting your hands often, take the flattened sausage and carefully wrap around one egg making sure to seal the sausage around the entire egg. Place on a baking dish that has been sprayed with nonstick spray. Repeat with all eggs. When all eggs have been wrapped with the sausage dip one at a time into the beaten egg then into a bowl of breadcrumbs, coating well. Return to baking dish. Repeat with all eggs. Bake in oven for 40 minutes turning at 20 minutes. Serve warm with your favorite white gravy recipe.
