Scallop BLT Stacks Recipe

Scallop BLT Stacks

Makes 4

6 dry sea scallops, sliced in half to form 2 discs
2 heirloom tomatoes, sliced so you halve 8 slices
1 avocado, sliced
6 slices apple-smoked bacon, cooked, drained and crumbled
extra-virgin olive oil
tarragon vinegar
salt to taste
fresh ground black pepper

For the dusting flour:
1 cup all-purpose flour
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
pinch red pepper

4 5' wooden skewers

Place the flour and the next four ingredients in a bowl and mix with a whisk. Place the scallops in the flour mix and lightly coat. Cover the bottom of a large saute pan with olive oil and heat until nearly smoking hot. Place the scallops in the pan and saute until lightly browned. Turn the scallops and cook for another minute or two. Transfer to a plate and salt. To assemble: place one slice of tomato on a plate followed by a scallop then another tomato then scallop then avocado and finally another scallop. If the stack seems unstable you can place a skewer through it. Now drizzle the stack with the olive oil and vinegar and sprinkle the bacon crumbles over the plate. Sprinkle the plate with the salt and pepper.
