Redneck Caviar
1 small red onion, finely chopped
1 green pepper, finely chopped
2 cans corn, drained
2 cans black beans, drained and rinsed
1 package feta cheese, any flavor
1 small bottle Italian dressing
Mix all ingredients in a large bowl and refrigerate overnight. Serve with tortilla or corn chips as a dip. This also works well as a complimentary side salad.
