Red Beans and Rice:
1 pound red kidney beans
8 strips bacon - diced
1 onion - diced
1 bell pepper - diced
2 ribs of celery - diced
1 bay leaf
3 Tablespoons granulated garlic
3 Tablespoons Italian Seasoning
1 pound smoked sausage - sliced 1/4" thick
salt and pepper
Soak beans overnight in three times their volume in cold water. Saute bacon, onion, bell pepper and celery until slightly browned. Add beans, bay leaf, garlic and Italian seasoning and cold water to cover, plus 2 inches. Bring to a boil, then turn down to simmer for about 1 to 1 1/2 hours. When beans have softened, add sausage and cook 30 more minutes. Add more water if necessary. Season with salt and pepper to taste. Serve over rice.
