Nana's Pineapple Au Gratin
1- 13.5 oz. can Pineapple chunks (reserve juice)
2- Tbsp flour
1- Cup sugar
2- eggs
1- pinch salt
1- (8 oz.) pkg cream cheese
2- cups miniature marshmallows
cheddar cheese, grated
Drain pineapple chunks and reserve 3/4 cups of the juice. In a double boiler, combine the juice, flour, sugar, eggs and salt. Cook over very low heat until thick. In a casserole dish, layer cream cheese, marshmallows and pineapple chunks twice. Pour sauce over top. Finish with a generous layer of grated cheddar cheese. bake at 350 for 25 minutes or until bubbly hot.
