Mini Strawberry Shortcakes Recipe

3 cups sliced strawberries
1 cup cake cubes*
1/4 cup orange juice
1/2 cup light whipped topping


*use low-fat recipe on yellow cake mix and substitute egg whites for eggs.

Use a 4 cup bowl and layer 1 cup of berries followed by 1/2 cup of cake cubes and then 2 tbsp. orange juice over the cake followed by 1/4 cup whipped topping.
Repeat layers. Top with last cup of berries on top. Refrigerate for about at hour. To serve take 12 shot glasses and divide into 12 servings. Garnish with a strawberry slice. Serve on a silver tray to make the dessert special. Calories are about 35 per shot.
