Mexican Casserole:
2 t. olive oil $ .10
1 cup raw rice .30
1 t. cumin .05
1 t. chili powder .05
½ t salt .05
2 c. cooked chicken, diced 1.50
1 c. chopped green pepper .33
1 can black beans, drained and rinsed .50
10 oz. chicken broth 0
½ c. shredded Mexican cheese .45
Total for 4 servings: $3.33
Heat oil and cook rice and seasonings for about 2 minutes. Stir in the chicken, green pepper, black beans, chicken broth and bring to a boil. Cover and reduce heat and simmer about 15 minutes till rice is tender. Top with cheese while hot and serve with tortilla chips. Serves 4.
