Horseradish crusted grouper with infused Chive Oil


1 grouper filet (skin removed)
1 tablespoon fresh horseradish root (peeled)
1 tablespoon fresh herbs
1 cup Panko bread crumbs
salt and pepper to taste
2 tablespoon vegetable oil

Chop frtesh herbs(basil, chives, parsley, ect) and toss into the bread crumbs.
Press grouper filet into the mixture on one side only.
Heat the vegetable oil in a skillet over medium high heat.
Place the fish in the skillet bread cumb side down and cook untill golden brown.
Turn over and finish cooking the fish through.

Chive oil

2 T fresh chives
1 cup salad oil

Add oil and chives in a blender and blend to infuse oil.
Drizzle around the grouper filet.
