Golden Pineapple Foster

Ingredients
½ Fresh Golden Pineapple (peeled, cored, and cut into medium chunks)
1 cup light brown sugar
1 stick salted butter
Juice of ½ lemon
2 TB Pineapple Rum
2 TB 151 Rum
Vanilla Ice Cream
(garnish with fresh mint and berries)




Procedure
On Medium High heat in a non-stick skillet add ¼ stick of butter and the pineapple. Sauté 2-3 minutes then add the remaining butter along with the brown sugar. Add the lemon juice. Remove from the heat and add both types of Rum. Flambé the dish . Serve warm over a scoop of vanilla ice cream. Garnish with a sprig of mint and fresh berries.
