Fresh Crab Meat Salad/Cakes
• 2 ½ cups mayo
• 1 cup capers
• ¼ cup Creole mustard
• Juice from 4 lemons
• 8 scallions finely minced
• ¼ cup bread crumbs
• 1 tablespoon finely minced parsley
• 1 tablespoon Old Bay Seasoning
• 1 teaspoon salt
• 1 teaspoon black pepper
• 2 pounds fresh crab meat
*Add the first four ingredients into the bowl of a food processor. Process until well blended then add to your crab meat with the parsley, scallions, Old Bay seasoning, salt and pepper. Let set for 2 to 4 hours. Serve chilled over mixed salad greens or form into crab cakes or balls, coat with bread crumbs then sauté in butter or deep fry in canola oil. Serve with tartar or cocktail sauce.
