EL PASO SLAW
2 cups shredded green cabbage @ .69 a lb. $ .98
¼ thinly sliced red onion .27
2 T. chopped green chilies @ .69 .30
1 can Mexicorn, drained .75
1 cup shredded cheese .83
¾ c. Ranch dressing .85
1 T. lime juice .12
1.2 t. ground cumin .05
Total for 4 servings: $4.15
Toss the cabbage, onion, chilies and corn together. Mix the ranch dressing, lime juice and the cumin together and toss with the salad. Top with the cheddar and chill. Serves 4.
CRAB AND NOODLE CASSEROLE
1 8 oz. package of egg noodles $ .69
1 flat can of crab meat on sale 1.00
1 can tomatoes & green chilies .69
1 can cream of shrimp soup on sale @ 2 for 3.50 1.75
1 cup cheddar @ 1.50 for 2 cups .75
2 T. margarine .10
Total for 4 servings: $4.98
Cook noodles according to package, drain and set aside. Drain the tomatoes and green chilies. Place ½ the noodles into a greased casserole. Sprinkle ½ the cheese and crab meat and cheese over the noodles. Add the remainder of the noodles, cheese and crab meat. Combine the shrimp and the tomatoes and chilies and pour over the noodles. Bake at 375 degrees for 30 minutes until hot and bubbly. Serve with hot bread and salad.
