Creative Crawfish Etouffee
Ingredients:
• 1 cup diced onion
• 1 cup diced bell peppers
• 1 cup diced celery
• 1 qt. Heavy Cream
• 1 cup sliced mushrooms
• 1 pound of crawfish tails
• ¼ cup dry sherry
• 1 cup cheddar cheese
• 1 tbsp. Roasted Garlic(Granulated Garlic)
• 1 tbsp. Tony’s Creole
• ½ tbsp. Thyme
• ½ tbsp. Oregano
• ½ tbsp. Basil
• ½ cup Flour
• 2 tbls. Butter
Sauté vegetables in butter for 5 minutes. Add flour to create roux, then add the dry seasoning and heavy cream slowly with the dry sherry. Cook for 10 minutes and then add the cheese. Simmer for 5 more minutes and add to your favorite base. (Cheese Grits, Rice, etc..)
