Cooking Under $5 Recipe

½ cup chopped bell pepper (any color) green 3/1.00 $ .35
½ cup chopped green onion or sweet onion .25
2 t. or more of minced garlic .20
2 t. dried basil .15
½ t. dried rosemary .05
1 T. olive oil .10
2 cups water
1 cup long grained rice @ .89 for 4 cups .25
½ cup chopped fresh tomatoes .35
1 cup fresh or frozen peas or green beans .45
1 ½ cups leftover chicken or ham or any meat 1.75
Total for 4 to 6 servings $3.90
In a skillet with a cover, sauté the vegetables and spices in the oil until they are tender. Stir in the water, rice, tomatoes, peas and chicken, add salt and pepper to taste. Cover and cook on low for about 20 minutes or until the rice is done.
