1 cup shredded Cheddar Cheese,
1 Cup shredded Mozzarella Cheese, or any good melting cheese
1/2 tsp. Salt & Pepper
1/2 Tsp. Chris’ Magic Dust
1 cup boneless, skinless breast of chicken
2 Tbsp. Butter
1 package of tortilla shells
1 package of sliced mushrooms
1 small diced white onion
SPRAY small nonstick skillet with cooking spray. Add butter, chicken, mushrooms, onions and salt and pepper; cook on medium heat 4 min. or until onions are tender, and chicken done, stirring frequently.
ADD tortilla shell to black iron skillet, add all ingredients. Pour mixture evenly to tortilla shell; tilt skillet to distribute mixture to one side. Sprinkle evenly with 2 Tbsp. of the Cheddar and Mozzarella cheese,
Fold the tortilla in half.
Cook an additional 1 to 2 min. or until tortilla are set.
Serve the quesadillas immediately. Accompany with guacamole and/or any of the tomato sauces.
Note: Quesadillas can also be made with squash blossoms, mushrooms, mashed potatoes.
