Romano’s Macaroni Grill
Chicken Marsala Ravioli
INGREDIENTS : serves 4 QUANTITY
Ravioli, thawed not frozen 24 each
Butter Flavored Oil 4 oz
Fresh Sliced Mushrooms 8 oz
Smoked Prosciutto, diced 2 oz
Asparagus, Bias sliced 4 oz
Sea Salt To taste
Black Pepper To taste
Heavy Cream 24oz
Marsala Cooking Wine 4 oz
Basil, Julienne 2 Tsp
Parmesan Cheese, Grated 2 oz
Basil Sprigs for Garnish 4 each
Ravioli:
The savvy chef can make homemade ravioli, for references you can find in pasta cookbooks or possibly on the internet. The advantage of homemade ravioli is the creativity it allows to invent what ever your taste buds desire. PROCEDURE:
1. Make sure that your water is boiling hot and remember that ravioli is a pasta and should be prepared as such.
2. Place ravioli in boiling water for 2 ½ to 3 minutes.
3. In a heated sauté pan, add butter flavored oil, mushrooms, smoked prosciutto, asparagus, sea salt, black pepper and sauté for about 30 seconds, or until mushrooms are cooked through.
4. Add marsala wine, heavy cream, julienne basil and simmer for about 2 to 4 minuetes.
5. Remove ravioli from water and drain well.
6. Add ravioli to sauté pan and toss until coated.
7. Place ravioli on platter, pillow side up.
8. Pour sauce evenly over ravioli.
9. Garnish with fresh fresh basil sprigs.
