1 bell pepper, diced
1 onion, diced
4 stalks of celery, diced
3 boneless, skinless chicken breasts
1 can chicken broth
1 can Rotel
1 can tomato sauce
1 can black beans
1 can red kidney beans
6 garlic cloves
1 tablespoon chili powder
1/2 tablespoon Tony's
1 tablespoon olive oil
Brown chicken in olive oil, remove and cool, then dice.
Saute' vegetables in drippings. Add all ingredients and simmer 30-45 minutes.
Top with grated cheese.
