Carolina Shrimp and Grits Recipe

ANDREE'S CAROLINA SHRIMP & GRITS

TWO SERVINGS

 

Carolina Shrimp

 

½ - ¾ lbs Shrimp

½ Green pepper, chopped

2 oz, sliced fresh mushrooms

¼ cup chicken broth

1/3 cup green onions, chopped

1-tablespoon flour

¾ teaspoon chopped garlic

2 teaspoons lemon juice

Dash of salt

Dash of cayenne

Dash of Creole seasoning

Dash of Tabasco

Crumbled, cooked bacon

 

Grits

 

1 cup uncooked grits

¼ lb margarine

6 oz cheddar cheese

2 eggs

 

Method of Preparation:

 

Grits

1)      Cook grits according to package directions

2)      Add margarine and cheese to grits, stir well.

3)      Add eggs and stir

4)      Pour 1 inch layer into pan

5)      Cook @ 350 degrees until set, about 30 minutes

6)      Cut into triangles

 

Carolina Shrimp

1)      Sauté shrimp in garlic and a little olive oil, set shrimp aside

2)      Deglaze pan with a little white wine

3)      Sauté peppers and onions until soft; add mushrooms, chicken base, lemon juice, and seasonings.  Sprinkle in flour. Cook until thickened, about two minutes.

4)      Add shrimp and heat.

 

Place triangles of grits on plate and spoon Carolina Shrimp on top.  Garnish with bacon and serve with you favorite vegetables.
