Dry Rub:
8 oz. Brown Sugar
1 Tbls. Salt
1 Tbls. Pepper
1 Tbls. Garlic Powder
3 Tbls. Mesquite Seasoning
1 Tbls. Jerk Seasoning
1 Tbls. Paprika
Mix all ingredients well and rub generously on ribs.
Ribs:
1 rack St. Louis Style or Baby Back Ribs
12 oz. White wine or water or beer
2 Tbls. Liquid Smoke
8 oz. BBQ sauce
1. Rub ribs generously with the dry rub mixture.
2. Place in roasting pan on rack. In the bottom of the pan place the liquid ingredients.
3. Cover and steam for 2 hours. The ribs should be tender but not completely falling off of the bone.
4. Remove and add the sauce. Finish on the grill or in the oven.
