Barbara Smith is showing her grandson Jakobi how to eat a Crawfish. She's been coming here since the beginning and it's his first time with a mudbug. “He's ask me once he's got it real clean is it okay for him to eat it, and he cleans it up pretty good,” says Smith. Organizers say what makes this festival special is that it's something generations now have been able to enjoy. Iced crawfish by the bagful get cooked by people like Mike Hefner. He says he enjoys watching kids grow into Cajun culture at this festival.
“People that are first learning how to peel crawfish back then, now they're like pro's so that's a fun part about it,” says Hefner. Officials with the fiesta of five flags say they've gone all out for this year's 25th. They've added more food and more musical acts, anything to forget about your troubles for a little while.
“You know everyday you open the paper and it's just more bad news about the economy and I think Pensacola and the surrounding areas are ready to come out and have a good time,” says festival chairman Don Haferkam. He says they expect crowds in excess of 25,000 people over the event's three-day-life span.
